FILIPINO STYLE CARBONARA

Recipe:

  • Two chicken breasts or thighs (boneless, skinless)

  • 3 servings of spaghetti

  • Three to four strips of bacon or prosciutto

  • Parmesan

  • About five mushrooms

  • One onion

  • Three eggs

  • Three tablespoons of cream

  • Fish Sauce(optional but strongly recommended)

Ingredients:

  • First, cook the pasta while cooking the onions. Don’t forget to reserve some pasta water to thin out the sauce later.

  • Dice the onions and saute until translucent. Season with salt and pepper. Then, add minced garlic.

  • Cut the bacon into small pieces and add them to the same pan as the onions, cook until it begins caramelizing.

  • Cut the mushrooms and add them to the same pan.

  • For the chicken, season them with olive oil, salt, pepper, cayenne, and garlic powder. Sear and cook them in a pan. You can either chop them up or shred them.

  • For the sauce, add two eggs in a bowl with the parmesan cheese, cream, black pepper, and fish sauce.

  • Mix everything together, add reserved pasta water if the sauce is too thick.

  • Combine the pasta with onion bacon mixture, chicken, and sauce in a pan.

  • Serve it in a bowl and top it with more parmesan, leftover onion bacon mixture, and chicken. ENJOY!
