FILIPINO STYLE CARBONARA

Recipe:
Two chicken breasts or thighs (boneless, skinless)
3 servings of spaghetti
Three to four strips of bacon or prosciutto
Parmesan
About five mushrooms
One onion
Three eggs
Three tablespoons of cream
Fish Sauce(optional but strongly recommended)
Ingredients:
First, cook the pasta while cooking the onions. Don’t forget to reserve some pasta water to thin out the sauce later.
Dice the onions and saute until translucent. Season with salt and pepper. Then, add minced garlic.
Cut the bacon into small pieces and add them to the same pan as the onions, cook until it begins caramelizing.
Cut the mushrooms and add them to the same pan.
For the chicken, season them with olive oil, salt, pepper, cayenne, and garlic powder. Sear and cook them in a pan. You can either chop them up or shred them.
For the sauce, add two eggs in a bowl with the parmesan cheese, cream, black pepper, and fish sauce.
Mix everything together, add reserved pasta water if the sauce is too thick.
Combine the pasta with onion bacon mixture, chicken, and sauce in a pan.
Serve it in a bowl and top it with more parmesan, leftover onion bacon mixture, and chicken. ENJOY!
